Creamy Broccoli and Kale Soup


Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 green onion thinly chopped
  • 1 large head of broccoli
  • 1 cup fresh kale
  • 2 cups vegetable broth
  • ½ cup coconut milk
  • Juice of ½ lemon
  • Garlic salt and pepper to taste
  • Shredded cheese or almond cheese optional
  • 1 cup arugula

Instructions

  1. In a medium soup bowl, heat the olive oil over medium heat and cook the onion and garlic until soft.

  2. Add the broccoli, kale and arugula and stir until the leaves have wilted and the broccoli is bright green

  3. Pour in the broth and bring to a boil.
  4. Simmer until the broccoli is soft.
  5. Remove from the heat and blend until smooth.
  6. Add the coconut milk and lemon juice and continue blending until fully mixed.
  7. Season with salt and pepper to taste and serve topped with shredded parmesan cheese or almond cheese.

Recipe Notes

Tip: creams can be frozen, so they are great options for meal prepping.
